What is Kombucha anyway?
Kombucha is something I have enjoyed for over fifteen years. I first learned about it through a holistic doctor that I cleaned house for. He grew his own wheatgrass in the backyard, and fermented his own kombucha tea. So, what is kombucha? Kombucha is a probiotic beverage made by fermenting sweet black tea with a culture of yeast and bacteria. This culture is called a SCOBY.
Start with a “SCOBY”
Scoby is simply an acronym for symbiotic culture of bacteria and yeast. Although you use sweetened black, or even green, tea to start the fermentation, by the end there is markedly less sugar in the brew. How much sugar is left depends on how long you ferment the tea. I generally don’t allow my brew to go past seven days. There are many factors, but the best way to figure out if you’ve fermented long enough, is to give your brew a taste test!
What are the benefits of drinking kombucha?
Kombucha is thought to benefit the gut by re-introducing the beneficial bacteria that your digestive system needs to effectively process and digest foods. Your digestive system may not be the window to the soul, but it is the window to the rest of your body. After all, it’s often the entry point for pathogens.

Kombucha also contains a host of B vitamins, which are known to increase energy levels. According to Wide Open Eats, other health claims include:
- arthritis prevention
- cholesterol reduction
- cancer prevention
- weight loss
- enhanced athletic performance
- mood enhancement
Where can I find kombucha?
You can find kombucha at your local juice bar. My local juice bar serves it out of a keg! You can also find raw, unpasteurized kombucha (like GT’s brand) from some grocery stores. I think the best kombucha is the kind you make yourself. At the store, you’ll pay upwards of $5 or more for a small serving. You can brew it at home for much less, once you have the basic supplies. I’ll help you with that!
